Bumper Bars By Laura

Thanks to Laura Armstrong for sharing one of her favorite recipes with us. One of the great things about these bars is that you can choose the flavor you want and then vary them each time. In this, Laura used some homemade trail mix with apricot, cranberries & dates. You could also add things like dark chocolate, goji berries, orange zest, etc. I know I'll be giving them a go for the weekend! Enjoy...

 

Bumper Bars

1 cup quinoa flakes/rolled oats

1/2 cup flaked or desiccated coconut

1 cup nuts

1 cup dried fruit mix (apricots, cranberries, dates, dark chocolate)

¼ cup pumpkin seeds

¼ sunflower seeds

2 very ripe bananas

 

Method

Preheat oven to 180 degrees bake

Add the first 6 ingredients to a food processor (if you add some dark chocolate I suggest doing this last) and blitz until combined

Then add bananas and blitz until mixed

Line baking tray with baking paper and press the mixing in smoothing the surface

       

Bake in oven for 18 mins. Once cooled remove from baking tray and cut into pieces. Store in an airtight container if they won’t last long like in my house or in the fridge/freezer depending on how fast you will consume them.
